We planted Collard Greens awhile back but had never prepared them. They grew beautifully and were ready to be eaten. I found a simple recipe in my Clean Food cookbook which i modified just a bit. Ben and I were super excited at how yummy they tasted. I was of course thinking of all the nutrients we were ingesting!! Dark leafy greens are full of chlorophyll, calcium and vitamins. It is rare to find a food that has the ability to lift your mood, cleanse your liver & kidneys and balance your blood pH….Wow…Eat Your Greens!
Sauteed Garlic Greens
Serves 2
1 whole bunch of collard greens
4-5 garlic cloves
10 cherry tomatoes
1 tbsp coconut oil
1-2 tbsps mirin (japanese cooking wine)
Dash of vinegar
Sea salt & pepper to taste
Remove rough stalk ends from greens and chop leaves into bite size pieces. In large skillet over medium heat saute garlic in coconut oil until brown about 3 min. Add greens and mirin and saute for 1 min. Increase heat to medium and add water as needed to prevent sticking. Cut cherry tomatoes and throw in last minute. Season with salt/pepper as desired. Add a dash of vinegar, toss into a bowl and serve.
